Established in Autumn 2021 in Oga City, Akita Prefecture: "Ine to Agave," an up-and-coming craft sake brewery. It offers the delicate aroma of flowers spilling from the glass and a juicy flavor reminiscent of freshly picked fruit. The use of Philly Sour yeast—which does not rely on lactic acid bacteria—imparts a high-quality, crisp, and clean acidity that gently rounds off the experience with a pleasant finish. The name "Hana-Kaze" (Flower-Wind) draws its inspiration from the hops used in the brew ("Hana"/Flower) and the strong winds characteristic of Oga City, Akita Prefecture ("Kaze"/Wind).
