Product Description
This is the signature label of the "Matsu no Tsukasa" brand. Commonly known as "Blue," this Junmai Daiginjo is crafted exclusively from Yamada Nishiki rice grown in Ryuo Town—a variety cultivated with great care over some 30 years through a process of trial and error alongside our contracted farmers. This high-quality local Yamada Nishiki reflects the diverse soil characteristics found across different districts of Ryuo Town. By harnessing the unique qualities of the rice—which vary depending on the soil of the specific paddy where it was grown—we aim to express and convey the atmosphere of the villages, the landscape, and the distinct personalities of the individual farmers who nurture the grain.
Each year, we select specific districts and brew "Blue" batches based on soil type. To learn the story behind this sake and discover the unique characteristics and flavor profiles associated with each soil type, please visit the "Origins of Blue" brand page.
