DASSAI BLUE is a new American brand launched by Asahi Sake Brewery, 
which makes Dassai, by opening a state-of-the-art sake brewery and tasting room in Hyde Park,
New York, USA.

The concept comes from the Japanese proverb, "Blue comes out of indigo, and is bluer than indigo",
and the name was chosen from the idea that it would "exceed the original Dassai made in Japan.

"Type 23" is a Junmai Daiginjo made from Yamada Nishiki polished to 23%,
similar to Japan's polished 23%.
Rather than aiming for the same taste as in Japan,
it is pursue the deliciousness of DASSAI BLUE and aim for the best sake
that can be made in the New York environment.
