This is the premium series of "ZAKU," brewed by Shimizu Seizaburo Shoten, a sake brewery in Suzuka City, Mie Prefecture. Made with 40% polished Yamada Nishiki rice, fermented at low temperatures, the mash is placed in bags and hung up. Only the liquid that drips out by gravity without any pressure is bottled. The name "ZAKU" embodies the idea that this sake is created not only by the brewers, but also by the drinkers, those who serve it, and everyone who encounters it. "Satori" is taken from the name of the master brewer, Tomohiro Uchiyama. Enjoy this exquisite sake, which is elegant, full-bodied, and overflowing with transparency.
