The ZAKU SPECIAL Series “Zaku Daichi Daiginjo Shizuku-dori” is now available for purchase.
As with many Zaku releases, the product name includes the character “智” (Chi) from the name of its renowned Toji, Tomohiro Uchiyama. This time, it is written as “大智 (Daichi),” meaning “Great Wisdom.” While the quantity and bottle size may not be physically large, we are confident that those who experience it will be rewarded with a truly great sense of happiness.
“Daichi” is crafted using the shizuku-dori (drip extraction) method, where the sake mash is placed into suspended bags, allowing only the naturally dripping liquid to be collected without applying any pressure. This method yields only a very small amount from each batch, making “Daichi” an exceptionally rare and precious sake.
Although it may seem unfortunate that only a limited quantity can be produced, this meticulous process is precisely what gives rise to its brilliant aroma and beautifully expressive flavor—a Daiginjo sake so delightful it brings an involuntary smile with every sip.
