Until now, the name "Kuremikimai" referred exclusively to "Hoken Junmai Kuremikimai Hattan-nishiki," produced by Hoken Shuzo using Hattan-nishiki rice grown locally in Kure City. This year, however, Aihara Shuzo—also based in Kure City and famous for its "Ugo no Tsuki" brand—has released its own version of "Kuremikimai." It features a gentle aroma and a light, crisp flavor profile. It pairs exceptionally well with white-fleshed sashimi and tofu dishes. We also recommend comparing it with "Kuremikimai" produced by other breweries.
