The sake brewing rice "100% Yamada Nishiki" is polished to 45% and brewed slowly at low temperature in small batches. "Junmai Daiginjo Honryu" is brewed by cultivating yeast bred at the Kanazawa Regional Taxation Bureau in-house, and has a calm honey-like aroma that does not spoil the flavor of the food.
