A limited-release Junmai Daiginjo made with 100% Gin no Yume, a sake rice from Kochi Prefecture, carefully brewed at low temperatures to achieve a rich and refined flavor.
At Suigei, one of the flagship products from the Tosa brewery is Kōiku 54, a Junmai Ginjo brewed with Gin no Yume—the first sake-brewing rice developed in Kochi. It is characterized by a refreshing citrus-like acidity and a delicate ginjo aroma. Building on the qualities of Kōiku 54, this Junmai Daiginjo Suigei Kōiku Akiagari adopts a “Daiginjo-style” brewing method and employs the Kochi Yeast A-14, resulting in a richer flavor profile designed to pair beautifully with the tastes of autumn.
