While faithfully expressing the pristine natural environment of Yuzawa Town, Shirataki Sake Brewery has taken on the challenge of creating a low-alcohol genshu (undiluted sake) with a flavor profile they describe as "Neo Tanrei Karakuchi"—a modern interpretation of Niigata's signature clean and dry style, distinct from their traditional offerings.
Although it is a genshu, its alcohol content is kept at a relatively low 13% to under 14%, making it lighter than Shirataki's flagship sake, Jozen Mizunogotoshi Junmai Ginjo.
The result is a fresh, approachable sake that retains the depth and character of an undiluted brew while offering a lighter, more refreshing drinking experience. ?
