Product Description
Senkin sake is characterized by a sweet-and-sour profile, achieved by targeting an acidity level of 2.0 or higher and a *Nihonshu-do* (Sake Meter Value) of around -3. After pressing, the sake undergoes no lees removal, filtration, or water dilution; instead, it is promptly bottled and stored. It is then heat-treated via in-bottle pasteurization. While maintaining its status as *genshu* (undiluted sake), it is crafted to have a low alcohol content of 14% or less.
