By utilizing an advanced filtration technology known as ultrafiltration, which removes enzymes (proteins) to the utmost extent, this sake can be distributed at room temperature without pasteurization (heat treatment) and without any dilution after pressing, preserving it as a true nama genshu.
This allows you to enjoy the authentic flavor once only available at the brewery, now delivered with stable quality even through room-temperature distribution. Additionally, it is brewed using 100% Yamadanishiki rice from Banshu, Hyogo Prefecture, and crafted using the traditional kimoto brewing method.
