This year's theme is different polishing ratios achieved using the latest polishing technology, an evolution of the flat polished rice known as "Genkei Seimai Shingin."
Rather than shaving the sake rice into a round shape, the technology involves shaving the rice to its original grain shape and polishing it.
The 3rd edition is a Junmai Gino made from Yamadanishiki rice produced in Shiga Prefecture that is polished to 50%. A new rice up and rising rise.
