This is the first AWA SAKE (sparkling sake) to be released within the Mizubasho Vintage Series.
The year 2008 is also a milestone for Nagai Brewery, marking the launch of its very first AWA SAKE, “MIZUBASHO PURE.” After completing MIZUBASHO PURE, the brewery sought the next prestige expression of AWA SAKE and decided to challenge itself with a completely different base sake from PURE. This led to the adoption of secondary fermentation in the bottle based on a multistage (exponential) brewing method. By fully utilizing the patented technology developed for “MIZUBASHO PURE,” “THE MIZUBASHO PURE 2008” was born.
This first attempt at multistage brewing involved studying old brewing texts and closely monitoring the fermentation process with constant tension, comparing daily data to the figures recorded in historical documents. In the end, fermentation did not progress as far as described in the literature, resulting in a sake pressed with residual sweetness. By taking advantage of this sweetness and applying secondary bottle fermentation followed by long-term aging, exceptionally fine bubbles were created, producing a complex and elegant flavor profile.
As a pioneer of AWA SAKE and a brewery that has researched aged sake for decades, Nagai Brewery alone could create such a truly one-of-a-kind vintage AWA SAKE.
