Product Description
Kairyo Shinko was once cultivated exclusively in a specific region as a rice variety suitable for sake brewing. Its long-stemmed straw also made it ideal for traditional sandal production, which contributed to its popularity. However, as sandal production declined, cultivation of Kairyo Shinko also diminished, and it was eventually removed from the list of recommended sake rice varieties. After several years, it was revived and is now being reevaluated for its potential in sake brewing due to its favorable characteristics.
