Aiyama, once known as a "phantom" sake rice due to the difficulty of cultivating it, remains one of the rare and expensive sake rice varieties. A cross between Aifune 117 and Yamao 67, the name “Aiyama” takes one character from each parent strain. It is said to dissolve even more easily than Omachi, which already has a reputation for being delicate, making it especially challenging to brew and requiring expert skill.

For this sake, the Aiyama rice is luxuriously polished down to 33%. With a focus on drawing out elegant ginjo aromas, the brew reflects careful technique and experience.

While Aiyama still holds many mysteries, the sake made from it reveals a refined sweetness and deep umami — hallmarks of masterful craftsmanship
