Product Description
The initial aroma is citrus-like. When sipped, fresh and sweet notes reminiscent of Delaware grapes—derived from isoamyl acetate and ethyl acetate—spread fully across the palate. After the fragrant sweetness expands, the flavor turns surprisingly dry, with hints of acidity and astringency. It then settles into a light, mineral finish, leaving a refreshing, pleasant bitterness on the tongue with only a short aftertaste.
The 2023 vintage of Oyama Nishiki rice absorbed water well, but after steaming, it felt somewhat dry and resistant to dissolving, causing the Baumé reading to drop faster than expected—making the fermentation process quite nerve-wracking. Nevertheless, the final result turned out unexpectedly well, showing depth and a charmingly sweet aroma—worthy of becoming a new signature sake.
