and is carefully brewed by Nanbu's chief brewer and submitted to the Kanpyōkai.

"Yamada Nishiki" is known as the king of sake rice, and is a variety favored by brewers
all over the country, as it has excellent properties such as voluptuous rice grains,
resistance to crumbling during polishing, and solubility in moromi. It is prepared during the harsh cold of Iwate Prefecture, when the lowest temperature is below freezing, and fermented slowly and slowly at low temperatures. The sake is squeezed under low pressure and bottled as is without adding water.
