A sake brewed in autumn. Like Natsu no Hayate, this year's Gohyakumangoku was even harder to dissolve than last year and cracked during soaking, making it difficult to adjust the steaming ratio. However, by leveraging last year's experience and successfully optimizing the potency of the koji and adjusting the amount of water used, we were able to create a well-balanced sake.
It has a subtle ginjo aroma and a soft, full-bodied, rich flavor with a mellow, subdued umami taste.

Alcohol: 15%
