We use Tsuyuhakaze, a contract-grown sake rice grown exclusively in Nara Prefecture. Its heart is larger than Yamadanishiki.
At Kaze no Mori, we use Tsuyuhakaze grown in Mitsue Village, Nara Prefecture, by the agricultural production corporation Hotaru no Sato.
By brewing with 80% polished rice, you can enjoy the complex aroma and flavor of Tsuyuhakaze rice, including its characteristic acidity, astringency, and umami.
