Product Description
This sake was served in ANA’s international first-class cabins between December 2023 and February 2024. Now, a limited quantity from the same batch is available. ALPHA 2K is brewed with Akitsuho rice polished down to 22%, using Abunaga Shuzo’s unique method of extracting sake through osmotic pressure. After around six months of ice-temperature aging, it offers a rich, complex flavor with deep density.
Ikakidori Method:
A new pressing method independently researched and developed by Yucho Shuzo. A basket-like screen is submerged into the mash (moromi) to separate the sake from the solids. This technique allows the sake to gently seep out in an almost pressure-free state, without exposure to air. As a result, the aromatic components are preserved without dissipating, and the umami remains intact. You can enjoy the sake with the full flavor of the original mash.
