At the brewery, we have long upheld the philosophy that there is no inherent superiority or inferiority based on the rice polishing ratio. Instead, we express the energy of the earth and the density of flavor through numerical designations within the Kaze no Mori series.
This time, in response to the recent rise in rice prices, we conducted an experimental brew using a 70% polishing ratio, aiming to express the distinctive character of Akitsuho 657.
