As this is a newly used sake rice, we began by understanding its compatibility and potential with Kangiku Meijo’s brewing style. Inspired by seasonal hot pot and warm fish dishes, we aimed to create a sake with both gentle softness and a clean, refreshing finish—designed to harmonize beautifully with food.
