A product that surpasses the previous pinnacle of “Kamo Kinshu,” its Junmai Daiginjo.
The rice used is premium Yamada Nishiki from the Akitsu district in Tojo, Hyogo—designated as a Special A (Tokubetsu A) region. It is no exaggeration to call this the finest sake rice in Japan. This Yamada Nishiki has been polished down to 35%, marking a first for Kamo Kinshu.
After pressing, the sake is slowly matured at low temperatures, resulting in a gently rounded profile. While it carries a refined, aromatic fragrance, it also retains Kamo Kinshu’s signature lively freshness. The flavors continue to open up beautifully after opening, making it a highly satisfying and exceptional bottle.
