"Kameizumi Tokubetsu Junmai-shu" is crafted by Kameizumi Shuzo—a brewery with a devoted following—with an uncompromising commitment to using rice, yeast, and water sourced entirely from Kochi Prefecture. For the rice, they polish "Tosa-nishiki"—a premium sake rice variety from Kochi—down to 60% of its original grain size. The brewing process utilizes "AA-41" and "A-14" yeast strains developed by the Kochi Prefectural Industrial Technology Center, along with spring water from the Niyodo River system.
This sake is characterized by the profound flavor profile unique to Junmai-shu and a calm, gentle aroma; its crisp, clean finish ensures it remains enjoyable drink after drink without ever becoming tiresome.
