A dry sake made with low-polished Yamada-Ho!
This Junmai sake is crafted using Yamada-Ho rice polished to 80%—the seed ancestor of the famous Yamadanishiki, Japan’s best-known sake brewing rice. Yamada-Ho originated around 1877 (Meiji 10) and, despite its long history, cultivation was discontinued with the rise of Yamadanishiki. After 60 years, it was revived, making it a rice with a dramatic story.
Yamada-Ho contains less fat, which helps achieve the brewery’s ideal profile of a robust, structured sake with minimal off-flavors.
It features Kagura’s signature fresh and vibrant aroma, delivering a flavorful dry style. The lower polishing rate allows for a richer and more defined character, creating a sharp, well-balanced taste with depth.
This sake is completely unfiltered, and depending on the bottling timing, rice sediment may remain inside the bottle. The lively yeast, unique to unpasteurized namazake, can be felt directly on the palate, expressing dynamic freshness.
