This is a limited-edition Kagura brewed with sake rice Nojōho polished to 60% and Kyokai Yeast No. 1101.
Nojōho is the parent strain of Iwai, a sake rice unique to Kyoto. Once regarded alongside Yamada Nishiki as one of the two leading varieties with a reputation for excellent flavor, Nojōho disappeared in the late 1960s due to its tall stalks and the difficulty of cultivation, just like Iwai. Similar in characteristics to Iwai, it is known for its soft texture, thick grain, and abundant umami. Because it is produced in extremely small quantities, it is called the “phantom sake rice.”
To match this rare rice, it was brewed with Kyokai Yeast No. 1101, which has strong alcohol tolerance and produces a sharp, dry style.
The aroma opens with refreshing notes reminiscent of white grapes and pineapple. The flavor is dry and crisp, with a finish carrying a gentle sweetness like coconut milk. Fruity yet rustic in dryness, it also delivers the firm umami of rice—making it an ideal pairing with salty dishes.
As this sake is completely unfiltered, some rice components may remain in the bottle depending on the bottling stage. Being namazake (unpasteurized), the vibrant liveliness of active yeast can be felt directly on the palate.
