This sake is crafted using the newly developed Kyoto yeast, "Kyo no Koi,"
and features "Shuku" rice, a variety ideal for sake brewing, grown exclusively in Kyoto.
The result is a pure rice sake entirely sourced from the region. We embraced the yeast's
natural qualities to create a sake that is free-spirited and perfectly suited to its character.
The robust rice flavor and sweet body, characteristic of four-stage brewing and unprocessed sake,
are beautifully balanced with a crisp aroma and a refreshing sensation from long-term,
ultra-low-temperature fermentation. Unfiltered, this sake may retain some
rice sediment depending on the bottling time. Namazake delivers the vibrant
essence of live yeast straight to your palate.
