Product Description
This Junmai Daiginjo sake is made from the rare Aiyama rice, polished to 50%. Aiyama is a sake rice with roots in Yamada Nishiki, known as the king of sake rice, and Omachi, Japan's oldest native variety. The large grains dissolve easily in the mash, tending to concentrate the rice's flavor.
After pressing, the sake is bottled while still fresh. It has a soft, concentrated sweetness and the elegance you expect from Aiyama, and you can enjoy the vibrant live yeast that only unpasteurized sake can offer.
