In 2010, Fukui Prefecture began developing a new rice variety, Sakahomare. Brewed entirely from this rice, the sake expresses both a fresh, ocean-like minerality and a bold, mountain-like depth and intensity. Named “Etsuzan Jakusui,” it reflects the climate and natural character of Fukui.
