Crafted using premium “Tokujo Omachi” rice from Okayama Prefecture,
Jikon Tokujo Omachi Junmai Daiginjo has now been brought to life.
On this occasion, Kiyasho Shuzo was entrusted—through an almost miraculous connection—with brewing sake using just 28 bales of this exceptional Tokujo Omachi. While bearing the pressure of not wasting the farmers’ hard-earned efforts, there is also immense joy in being able to brew with this historic, first-ever “Tokujo Omachi” sake rice.
For this release, the rice was not over-polished, instead choosing the classic and ideal 40% polishing ratio.
