As its name suggests, this “Jikon Junmai Daiginjo NABARI” is brewed using Yamada Nishiki rice grown by contracted local farmers in Nabari City, Mie Prefecture. When visiting the brewery in the past, we were told, “Above all else, the farmers are working tirelessly to improve quality.” This bottle is one that truly embodies the brewery’s heartfelt dedication.
Its exceptional character begins with an elegant, refined, and beautifully expressive aroma. On the palate, it offers a well-balanced sweetness, smooth drinkability, and a juicy quality that pairs effortlessly with food. Toward the finish, the body of the Yamada Nishiki brings all the flavors together harmoniously, settling gently on the tongue and delivering a sense of perfect umami.
The lingering finish reveals a wonderful nuance reminiscent of the local clay-rich soil. It evokes a sense of terroir that rivals even renowned regions such as Hyogo or Awa, allowing one to truly feel the farmers’ devoted efforts behind the rice.
