Takeno Shuzo’s first sparkling sake has finally been released.
This is a bottle-fermented sparkling sake, created through secondary fermentation in the bottle.
An unfiltered, undiluted sake that underwent an extremely long primary fermentation was then subjected to a second fermentation inside the bottle.
Because the second fermentation is induced by adding yeast, it is officially categorized as a liqueur under labeling regulations.
The label design is inspired by the town emblem of Yasaka, Kyotango City — if you look closely, you might notice the shapes of “i,” “ya,” “sa,” and “ka.”
Rather than saying “Cheers to a new world of sake,” we say “Iyasaka!” — a traditional word meaning prosperity and celebration!
