i240 Miyama Nishiki is a Junmai Ginjo sake brewed with Miyama Nishiki rice polished to 50%, and it is an unfiltered namazake.
The brewing water used by Iwa-no-I is well water drawn from underground sources refined through the shell layers of the Boso Peninsula — among the hardest natural waters in Japan.
This mineral-rich water promotes strong fermentation, creating Iwa-no-I’s signature bold character — a sharp yet full-bodied flavor unique to the brewery.
