Known for its peach-like aroma and tender flesh, plums that are allowed to ripen fully on the tree are called “tree-ripened ume.” These fully ripened plums are carefully steeped in Japanese sake and slowly matured to achieve a rich, luscious texture.
The result is a refreshing balance of gentle acidity with restrained sweetness, complemented by a pleasant mouthfeel. Its fresh tartness and the soft, mellow character of sake pair well with a wide range of dishes, both Japanese and Western.
With plenty of fruit pulp and high dietary fiber content, it is especially recommended alongside meat dishes such as yakiniku, helping create a more balanced and wholesome meal.
