Hōken Brewery, located in Hiroshima, is a highly regarded sake producer led by Executive Director and Toji (master brewer) Tetsuya Doi, known for his passionate dedication to sake-making.
This Junmai Daiginjo is brewed using Yamada Nishiki polished down to 40%. It is also a personal favorite of Mr. Ōyama, the representative of Yamato-ya Liquor Store.
