Comments from the Brewery:
The sake mash is at a stage where the rice is only partially dissolved, with only about 20% of the rice being converted into alcohol. As a result, production is limited, but we hope you enjoy this unique creation. The flavor is more akin to cider or chuhai than traditional sake, yet what makes it truly special is how it naturally brings out a surprisingly fruity and elegant flavor—without the use of any fruit.
