Made with natural water, this sake offers a flavor reminiscent of cider—incredibly refreshing with a subtle mineral quality. While Hiran also uses the Omachi rice variety for its "Saido" label, that version uses Yamada Nishiki for the *koji* rice and only Omachi for the *kake-mai* (steamed rice added later in the process); this particular sake, however, marks the first time we have used Omachi for the *koji* itself. Those familiar with Omachi sake will recognize that this doesn't have the typical "heavy" profile often associated with the variety. Instead, from the moment it enters your mouth until it goes down, you can delicately perceive the complex *umami* unique to Omachi. The result is a sake that feels light yet fully captures the distinctive character of the Omachi rice.
