The Uonuma region in southern Niigata, home to Hakkaisan Brewery, is a heavy snowfall area surrounded by rugged mountains, including the sacred Mt. Hakkai. In winter, snow can accumulate up to three meters deep, and as it melts in spring, it becomes pure underground water that nourishes the land of Uonuma.
This abundant water and fertile soil give rise to Uonuma-grown Koshihikari rice, as well as seasonal blessings such as mountain vegetables, produce, and mushrooms. The lifestyle of Minami-Uonuma—supported by traditions like snow-storage preservation—has long been sustained by the gifts of snow.
Inspired by this snowy land, the sake named “Yuki no Naka no Sake” (Sake Within the Snow) offers a clean, refined profile with a harmonious balance of rice sweetness and umami, along with a clarity that can only be experienced before further maturation.
