This sake was by meticulously polishing Yamada Nishiki rice from Hyogo Prefecture’s Special A district and Gohyakumangoku rice from Minami-Uonuma down to a ratio of 35%. It was brewed with the utmost care and patience during the coldest, snowiest part of winter, employing the traditional techniques of *daiginjo* production. "Kongoshin" is a Buddhist term referring to the "unwavering heart" of a devotee—a mind steadfast and free from all distraction. We chose this name to reflect our own company’s unwavering commitment to producing the highest quality sake. At first glance, the sake presents a modest appearance, eschewing ostentation or heavy impressions. Yet, upon the first sip, a rich, fragrant aroma rises gently through the nose, while a delicately balanced, clean, and crisp flavor spreads softly across the palate, leaving behind a deep, rich, and lingering finish.
