The word "jam" comes from "jamming" or "jam session." Originally, it referred to jazz musicians who don't usually play together spontaneously creating music through improvisational sessions. It's a fascinating scene where their individual skills clash, yet something special is born—a truly captivating experience. haccoba's jam is made with a similar concept. This time, we've fermented seemingly unrelated ingredients—elderflower, hops (used to flavor beer), and sansho pepper (with its natural pungent spiciness)—together with pure rice and rice koji, resulting in a new and incredibly appealing flavor where tastes clash. The refreshing, muscat-like aroma of elderflower and the grapefruit-like citrus scent of hops—all of these, combined with the robust sweetness of the pure rice sake, spread dramatically throughout the mouth. And finally, the sansho pepper provides a nice, lingering finish.
This new kind of sake-based drink truly deserves to be called "craft sake."
