Brewed exclusively with Omachi rice from Okayama Prefecture, carefully polished to 55%. It offers an elegant, floral aroma, with the full-bodied umami characteristic of Omachi rice spreading gently across the palate.
When enjoyed chilled, its soft texture reveals a dignified core of flavor.
“Nyoisan” is the name of the mountain located behind the brewery. Our brewery has long been visited by many literary figures and artists. The name derives from a poem composed by the poet Akiko Yosano, who stayed at the brewery in the early Showa period. While admiring the mountain, she wrote: “Waves of deep green forest overlapping upon the slopes of Nyoisan, seen from the guest room in the morning.
