A Junmai Ginjo brewed with Bizen Omachi as the kakemai (main rice) and a blend of Yamada Nishiki and Aiyama as the kōjimai (malted rice).
Using a brewing method that “co-ferments” multiple rice varieties, it explores a new expression that adds clarity to the rich umami of Omachi.
It features a light, fruity aroma, a touch of natural effervescence, and a refreshing nama (unpasteurized) character, with a smooth acidity that lingers pleasantly.
Best enjoyed chilled, this sake pairs beautifully with meals.
