“Not flashy, but deeply satisfying”—the toji was so impressed by a sake made from Matsuyama Mitsui 25 years ago that he had long hoped to work with this rice. By chance, he was able to obtain it, resulting in a sake that embodies his long-held vision.
“Yumihari” refers to a half moon. Inspired by its shape and the sharpness of a drawn bow, this sake was crafted to be clean and crisp. It features subtle notes reminiscent of hassaku citrus with low sweetness, paired with Koueigiku’s signature clean acidity, making it an excellent choice as a food-pairing sake.
