Product Description

The popular Nagano brewery Daishinshu has been holding “sake rice study sessions” together with its contract farmers for over 10 years, steadily improving the quality of their sake rice through close collaboration.
In addition, the brewery brews sake using rice from each farmer separately, creating a system that carefully brings out the individual character of each grower.


From this year, Daishinshu has taken this approach further by clearly listing the names of the farmers and expressing the differences in flavour that arise from the soil characteristics of each region, allowing drinkers to truly experience these distinctions. The first release under this initiative is a fresh, unpasteurised new sake made using Hitogokochi rice grown by Yamada Farm in Niimura, Matsumoto City.


Yamada Farm is located close to the Daishinshu brewery, along the banks of the Azusa River. The area is characterised by alluvial soil, formed from layers of sand, silt, clay, and gravel carried and deposited by the river.
On the palate, this sake immediately leaves an impression of a gentle, full-bodied expansion, as if the depth of the clay-rich soil were spreading softly across the mouth. The finish then cuts cleanly and lightly, evoking the presence of gravel layers. The balance between richness and crispness is truly beautiful.
