Product Description

Daishichi Brewery has been entrusted with the distinguished responsibility of brewing a dedicatory sake for offerings to Kōbō Daishi (Kūkai) at Mount Kōya, through the direct appointment of Sampōin, a distinguished temple branch entrusted with presenting sake offerings to the revered founder of Shingon Buddhism.
In the depths of winter, before dawn in January, the chief priest of Sampōin, Reverend Zentaka Hidaka, performs the "Water Drawing Ceremony" (取水の儀), collecting pristine spring water from a sacred stream flowing through Okunoin, the most revered site on Mount Kōya. This sacred water is then transported to Daishichi Brewery in Nihonmatsu, where it is ceremonially added to the brewing process during the "Water Pouring Ceremony" (注水の儀) and used in the preparation of a Junmai Daiginjo sake.


The resulting moromi (fermenting mash) ferments with remarkable vigor, as though imbued with a mysterious power, eventually giving rise to a powerful Kimoto-style Junmai Daiginjo Shizuku Genshu (drip-pressed undiluted sake).


The name "Kikyō" (亀鏡) means "model" or "exemplary standard." It was bestowed by Reverend Zentaka Hidaka, who selected the characters from the authentic calligraphy of Kōbō Daishi himself.
