Bijofu “Yumebakari” is the brewery’s finest Junmai Daiginjo, crafted with the utmost skill, care, and dedication of its brewers.
It uses top-grade rice harvested from the prestigious “Special A District” in Tojo, Hyogo—renowned as the pinnacle region for Yamadanishiki. Building upon this masterpiece, additional time and patience have led to “Yumebakari TIME,” bringing the sake to a state of refined maturity.
Aged for over a thousand nights in a carefully controlled low-temperature environment, this limited-production Junmai Daiginjo offers a gentle, soft mouthfeel and an exceptionally smooth finish. It reveals a deep, time-developed umami with a long, elegant aftertaste.
