Crafted with Yamada Nishiki from Yokawa, one of Hyogo’s prestigious Special A (Toku-A) designated growing areas, this exceptional sake is polished to just 30%.Rather than relying on the ethyl caproate-driven aromas often associated with highly aromatic sake, Kyokai No. 901 yeast is used. It produces a more restrained isoamyl-style aromatic profile, with delicate, refined notes that lend the sake an elegant and distinguished character.
A meticulously balanced Junmai Daiginjo, this bottle represents the culmination of the brewery’s skill and craftsmanship.
