By incorporating house-distilled kasu-tori shochu—made from their own sake lees—into the fermenting mash using the traditional hashira shochu method, it achieves a refined dryness not found in the standard “Abe” series.
While preserving its fresh acidity and rice-derived umami, the shochu element adds a light, crisp edge that sharpens the overall profile. A refreshing character reminiscent of white grapes, with a subtle hint of astringency, extends into a clean and quietly lingering finish.
