The final installment of the “YASO GIN SAKE” series, crafted by Abe Brewery in Niigata in collaboration with Echigo Yakuso. Using a circular brewing method that incorporates the lees (ori) produced in the α and β batches into the final addition, this expression captures even the lingering nuances of fermentation.
A gentle richness from the ori is layered with sparkling acidity and a refreshing hint of bitterness, while a light effervescence tightens the overall profile. The presence of botanicals is subtly integrated in the background, achieving both complexity and clarity. Within its softly shifting white tones, a quiet hint of freshness gently unfolds.
